Holiday Food Truck Festival

Sue’s best friend and her husband are down for the New Years weekend and they wanted to check out the Holiday Food Truck Festival in Balboa Park. We arrived around 2:30 pm and were surprised to see a few trucks already set up and serving food. We walked around to get the “lay of the land” and grabbed a table and just enjoyed the great weather and people watched. Sue had to work and eventually joined us around 5:00 pm where her and Kathy enjoyed their mini reunion and got caught up on all matters concerning the families!

Kathy had an Empanada which we all tried and when Sue and I made our way down the line of trucks the choices we varied and wide. We settled on a hot corned beef with mustard sandwich and a side of fries.

When dark fell the promenade was lit with lights to celebrate the season and when you looked to the stars it felt like you were in the Venetian hotel looking up at the ceiling because the buildings were a glow in lights with the sky dark except the stars.

Dinner:                                  Spaghetti w/ Meatballs

Snack:                Salmon (Mixed like tuna fish) for Sue / Sardines for Mike

Breakfast:                        Rice, Veggies w/ scrambled eggs

Lunch:                              Grilled Chicken Breast w/ Veggies

Dinner:                             Saturday Leftovers (Flank Steak)

Snack:        Celery w/ Almond Butter

Wednesday

Breakfast:                                     Smoothie

Lunch:                          Sunday Leftovers (Chicken & Veggies)

Dinner:                                  Spaghetti w/ Meatballs

Snack:      Salmon (Mixed like tuna fish) for Sue / Sardines for Mike

Thursday

Breakfast:                    Rice, Veggies w/ scrambled eggs

Lunch:                                                 Soup

Dinner:                                 Fish w/ Sautéed Zucchini

Snack:      Celery w/ Almond Butter

Friday

Breakfast:                                       Smoothie

Lunch:                            Grilled Chicken Breast w/ Veggies

Dinner:                   Cheese plate w/ sardines, fruit, olives & WINE!!!

Snack:     Hard Boiled eggs, dried fruit
